Southwest Chicken Power Bowls
with Creamy Avocado Lime Dressing

These Southwest Chicken Power Bowls are loaded with seasoned chicken, crisp veggies, black beans, corn, and a creamy avocado lime dressing. What You’ll Need
For the Chicken
1 boneless, skinless chicken breast
2 tbsp olive oil
1 tbsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tsp cumin
½ tsp smoked paprika
½ tsp sea salt
¼ tsp black pepper
Juice of 1 lime
For the Bowls
4 cups mixed greens or chopped romaine
1 can (15 oz) black beans, rinsed & drained
1 cup corn (fresh, frozen, or canned)
1 cup cherry tomatoes, halved
1 avocado, sliced
½ red onion, diced
½ cup shredded cheese or cotija
Fresh cilantro (optional)
Cooked quinoa or brown rice (optional)
For the Avocado Lime Dressing
1 ripe avocado
¼ cup plain Greek yogurt (or dairy-free)
Juice of 1 lime
1 clove garlic
¼ cup fresh cilantro
2–4 tbsp water (to thin)
Sea salt, to taste
Black pepper, to taste
Let’s Make It
1. Prep the chicken.
In a small bowl, mix the olive oil, chili powder, garlic powder, onion powder, cumin, smoked paprika, salt, pepper, and lime juice. Coat the chicken breast and let sit for 10–15 minutes—or longer if you have time.
2. Cook the chicken.
Heat a skillet or grill pan over medium heat. Cook chicken for 6–7 minutes per side, or until fully cooked (internal temp 165°F). Let rest for a few minutes, then slice.
3. Make the dressing.
In a blender or food processor, combine avocado, Greek yogurt, lime juice, garlic, cilantro, salt, and pepper. Blend until smooth, adding water a little at a time to reach your desired consistency.
4. Assemble the bowls.
Start with a base of greens (and quinoa or rice if using). Top with black beans, corn, tomatoes, red onion, sliced chicken, avocado, cheese, and fresh cilantro.
5. Drizzle and enjoy.
Add a generous drizzle of avocado lime dressing and savor every bite.
Make It Yours
Swap the chicken for grilled shrimp, tofu, or leftover protein. Use whatever veggies you have on hand, adjust the spice level to suit you, or add quinoa or brown rice when you want a heartier bowl.
