Peach Chia Pudding
Creamy, dreamy, naturally sweet—and ridiculously easy to prep. This peach chia pudding is full of fiber, healthy fats, and plant-powered goodness for a satisfying breakfast, snack, or grab-and-go treat.

What You’ll Need
1 (14 oz) can full-fat coconut milk or coconut cream (use the thick, creamy part)
1 large ripe peach, peeled and chopped (about 1 cup)
½ teaspoon vanilla extract
1–2 tablespoons maple syrup, to taste
⅛ teaspoon almond extract (optional)
¼ teaspoon ground cinnamon
Pinch of sea salt
⅓ cup chia seeds
Optional Toppings
Vanilla Greek yogurt or dairy-free yogurt
Fresh diced peaches
Toasted pecans
Unsweetened coconut flakes
Cinnamon
Peach chia jam
Grain-free granola
Make It
1. Blend
Add the coconut milk (or coconut cream), peach, vanilla extract, maple syrup, almond extract (if using), cinnamon, and sea salt to a high-speed blender. Blend until completely smooth.
2. Add the chia seeds
Pour in the chia seeds and pulse just a few times until evenly combined.
3. Chill
Transfer to a sealed container or individual jars and refrigerate for at least 2 hours. Overnight gives you an even better texture.
After about 30 minutes, give it one quick stir if needed to keep the chia seeds evenly distributed.
4. Serve
Layer with yogurt, fresh peaches, peach chia jam, and your favorite toppings for a beautiful parfait—or eat it straight from the jar. No judgment from Amy. 😂
Make it Yours
Prefer it creamier? Add a spoonful of Greek yogurt when serving. Want more crunch? Toasted pecans or grain-free granola are fantastic here. And when fresh peaches aren't having their moment, try another ripe fruit you love.
